Experience Mardi-Gras and Cajun cuisine in Manitou! Enjoy samples of gumbo from professional chefs and amateur cooks to help determine who has the best gumbo! Gumbo is a Cajun soup that contains roux and dried sassafras. It also usually contains a variety of meats such as chicken, seafood, or sausage.
